Tagine...

Living in North Africa was a great opportunity to learn about some of the Mediterranean recipes. One of the most popular recipes and cooking vessel was the Tagine. Perhaps you will notice that the word Tagine is used interchangeably at times. Sometimes it is referred to a beautiful clay cooking pot which features a tall, conical lid that locks in aromatic steam and continuously bastes cooking foods in their own juices and sometimes it is referred to a recipe, for example, chicken or vegetable tagine which is traditionally served in a tagine. 

I love cooking in a tagine, the recipes turn into a delicious, tender and flavorful dish. The tagines are available in many different sizes/colors, absolutely beautiful, which makes it really easy to cook, serve and cleanup…all in one dish! At times, I have incorporated a tagine in my cooking classes, which was very well received and fun to do.
